THE BISSAP, the Hibiscus Flower
The Bissap is a drink made from dried hibiscus flowers (see the picture) that is consumed mainly in West Africa.
The Bissap has a beautiful color that oscillates between pink and red, depending on the degree of dilution and infusion. The scent is very aromatic and taste evokes red fruits with good acidity.
GARI from BENIN
Gari is a kind of thin and white semolina which is made from cassava roots.
The manufacture of Gari is made up of various long and tedious steps especially when it’s made the traditional way. You peel and wash the cassava, then follow the steps of pressing and fermentation of the pulp, eventually, it’s screened and the final step is the cooking, also called “garification “.
